- 1 can (20 oz.) crushed pineapple in juice
- 1 medium ripe banana
- 3/4 cup granulated sugar
- 4 teaspoons lime juice
- 1/2 teaspoon vanilla extract
- 1 can (13.5 oz.) JFC Coconut Milk
- 3 springs fresh mint leaves (optional)
Combine whole can of pineapple with juice, banana, sugar, lime juice and extract in electric blender container. Whir on high speed until blended and smooth, about 2 minutes. Add coconut milk; mix well. Pour into 13 x 9-inch pan. Cover and freeze until firm, stir occasionally. Spoon into freezer container and freeze until ready to serve. Decorate with mint leaves if preferred.
Makes about 10 (2/3cup) servings.
