Chilled Celery and Water Chestnut Appetizer

Ingredients:
  • 3 stalks of celery, clean well and cut into 1 inch length
  • 1 can (8oz) Dynasty Water Chestnut, drained and coarsely chopped
  • 1 tablespoon Dynasty Fish Sauce
  • 2 teaspoons lemon juice
  • 1 teaspoon Dynasty Sesame Seed Oil
  • 1/4 cup chopped fresh mint leaves

Directions:
Bring a big pot of water to boil, blanch both celery and water chestnut for 2 minutes.
Transfer cooked celery and water chestnut to a colander and run cold water through it for 1 minute and set aside.
In a medium bowl, whisk together fish sauce, lemon juice and sesame oil
Combine dressing with drained celery and water chestnut and toss well until coated.
Covered and refrigerate for 1 hour before serving.

Servings:
Makes 3 servings, 1 cup each.
